One of my facebook friends, and fellow sports mom of 2, shared a recipe for Slow Cooker Crack Chicken. She said that she had tried it and her kids really liked it! Y’all know I am ALWAYS looking for new crock pot recipes to try, especially during this busy time of year.
Of course y’all know I can’t leave well enough alone, so I had to change it up a little. I subbed 1 of the cream cheeses for a cup of mayo* and I added lots of shredded cheese and green onions. We served it on bakery croissants, but it would also be delicious on hamburger buns or king Hawaiian rolls. We will DEFINITELY be making this one again and again!
The leftovers made an excellent lunch for me yesterday. I warmed it back up and served it on ritz crackers, because I was out of bread. SO GOOD!
Ingredients
- 4 Chicken Breast
- 1 package Ranch dressing mix
- 8 oz cream cheese
- 1 cup mayonnaise
- 1 lb bacon, cooked and crumbled
- 2 cups shredded cheddar cheese
- big handful of chopped green onions
Instructions
Place chicken breasts in the crock pot. Sprinkle with ranch seasoning and place cream cheese on top. Cook on low 6 hours. Remove chicken and shred chicken with 2 forks and add it back to the slow cooker and stir in the mayonnaise and cooked bacon and sprinkle with cheese. Replace lid and cook on low for 15 more minutes or until cheese is melted. Top with green onions and serve on rolls or crackers. Enjoy!
